Chicken Spaghetti Bolognese
One of our families favourites
We had visitors and we had ran out of mince but we had chicken so we threw together this recipe and thank goodness it was a success

3 Maryland or 8 chicken legs cut Maryland chicken in half with skin and fat off
1 brown onion diced
dob of butter and 1tbs of oil
pasta of your choice

Pasta sauce (but you can use your own)
1 jar of Spaghetti sauce of your choice I use 5 brothers
1 tsp of mixed herbs
1 cup of grated tasty cheese
water to cover
A good splash of tomato sauce
1 tin of tomato paste
Lge casserole pot with lid

Place casserole pot on stove top on a med heat
Add butter and oil once the butter and oil has heated and melted add onions cook until transparent
Add chicken legs, and cook till theyre sealed and a little golden on the outside
Stirring and turning chicken until sealed
Turn the heat down to med low and add the ingredients for your pasta sauce of you choice

Pasta Sauce
Pour in the jar of pasta sauce, add water to cover chicken,
Then add mixed herbs, tomato sauce, tomato paste and stir
As the sauce starts to cook approx 30 mins add grated cheese slowly stiring as you adding the cheese This will make the sauce thicker and tones down acrid taste
Turn stove to low heat to simmer
Cook the chicken and sauce stirring occasionally so the chicken and sauce doesnt stick
25mins before the chicken is ready Cook pasta of your choice by instructions until its soft and not chewy
The chicken is ready when the meat is white and the meat is falling off the bone which is approx 2 hours
Drain pasta and dish into separate bowls then serve by scooping a piece of chicken on top of pasta and pour pasta sauce
Serve Hot
Can serve garlic or herb bread as a side dish
