I think most of them have learned by now that I’m very attached to Indian food and have some cooking experience in the field. Of course, if I want to cook a classic dish, I first look at the recipes of other bloggers, cooks, etc. Not only do I want to find out what gives this dish its name, but also what needs to be inside and what should not be inside.

Take for example Chicken Tikka Masala . First and foremost, it’s a British dish that was most likely invented in an Indian restaurant. However, this name already tells us a lot about the preparation. Chicken Tikka is a standalone Indian dish. It consists of chicken meat marinated in advance with yoghurt and spices and then baked in the tandoor (Indian clay oven). Masala refers to the seasoned sauce.

Fortunately, I’ve already developed a good marinade for my Palak Chicken , so I just had to make a few changes to it. The Masala is similar to the previous, but is additionally refined with cardamom and rounded at the end with cream.

Of course, the meat does not have to be baked in a tandoor. Unless you own one! If you have the opportunity to barbecue, then wonderful. This gives the meat a slightly smoky note. No barbecue? No problem, then roast the pieces in a (grill) pan.

As a side dish I recommend rice – I have to dodge Jasmin Reis right now because my Basmati rice is used up – or a delicious fresh Naan .

Tips and Tricks for Chicken Tikka Masala

  • The masala can be prepared very well, just leave covered and later boil with a little water, then add the meat.
  • If you can not get fresh tomatoes or have no ready, then just use peeled tomatoes chicken tikka masala from the tin or polpa chicken tikka masala , Rinse the peeled tomatoes briefly or let them drain and weigh just as well.
  • Do you cook for children or do not eat spicy food? Then drop the ground chillies and use pepper powder instead.

ingredients
Chicken tikka
  • 250 g chicken breast fillet
  • 10 g of ginger grated
  • 2 cloves of garlic
  • ¼ tsp cumin
  • ¼ tsp coriander
  • ¼ TL Garam Masala
  • ½ tsp Deggi Mirch or paprika (mild) or ¼ tsp ground chillies
  • ½ tsp paprika ( optional )
  • 1 pinch of turmeric
  • 50 g yoghurt
  • Juice ½ lemon
  • ½ tsp salt
Masala
  • 1 bay leaf
  • 1 cardamom pods
  • 1 onion (40 – 50 g)
  • 10 g of ginger
  • 2 cloves of garlic
  • 300 g of tomatoes or peeled tomatoes or pulp
ground spices
  • ½ teaspoon cumin
  • ¼ tsp coriander
  • ½ tsp Deggi Mirch or paprika (mild) or ¼ tsp ground chillies
  • ¼ tsp turmeric
  • ¼ TL Garam Masala
also
  • 2 – 3 tablespoons cream or Greek yogurt or coconut milk
  • water
  • salt
  • lemon juice

preparation
Preparation chicken tikka
  1. Peel garlic and ginger and finely grate / dice / squeeze. Dab chicken breast dry and divide into 1.5 to 2 cm cubes.
  2. In a bowl of yogurt, juice ½ lemon, spices, ginger, garlic and salt together. Soak the meat with your hands so that all the pieces are well covered with the marinade. Cover the bowl with cling film and place in the refrigerator. Marinate for at least 2 hours (better 8 to 24 hours)

  1. Prepare grill and preheat accordingly.
  2. Spread the meat on several skewers and grill on the hot grill from all sides until the meat is just cooked.
  3. Put the skewers aside, let cool and pull down the meat with a fork. Set aside until use.

  1. Heat a medium-high pan and fry the pieces of meat until they are slightly brown and cooked. Place in a bowl and set aside until ready to use.

  1. Peel the onions and finely dice them. Wash tomatoes and dice. Prepare ground spices. Crush the cardamom pods with the flat side of a knife. Peel ginger and garlic and finely grate / dice / squeeze.
  2. Optional : Roast cashews in a pan, let cool and chop.
Preparation Masala
  1. Heat ghee / oil in a pan over medium heat. Add the cardamom and bay leaf and roast briefly in the oil until the spices give off their flavor to the oil.
  2. Add the onions and roast until golden yellow while stirring. Add the ginger and garlic and stir-fry until the characteristic scent liberates (30 – 60 seconds).
  3. Add tomatoes and ground seasoned spices. Roast until the tomatoes are cooked and oil settles on the sides.
  4. Optional step for a more beautiful homogeneous look : Put the masala in a bowl and allow to cool slightly. Then purée finely and return to the pan.
  5. Add EL water, if the mass is too thick, then add the grilled meat. Season with salt and lemon juice. Bring to a boil, then stir and reduce heat.
  6. – Stir in 3 tablespoons of cream, if necessary, season again.
  7. Garnish chicken tikka masala with fresh chopped coriander / parsley, a pinch of garam masala and the chopped cashews and serve hot.
